- 2 eggs
- 3.5 oz yogurt
- 4.2 oz sugar
- 1/2 teaspoon baking powder
- to taste pistachio cream
- to taste pistachio granules

How to Make Pistachio Muffins
In a large bowl, start by beating the eggs with the sugar;
then add the yogurt, and mix.
In the meantime, sift the baking powder together with the pistachio flour and combine all ingredients.
Pour the mixture into muffin molds. Bake on the lower rack of the oven, in static mode preheated to 356°F for about 12-15 minutes. (always do the toothpick test).
Remove from the oven and let cool on a wire rack.
Then decorate them with the cream and pistachio granules.
Storing Pistachio Muffins
The soft and delicious pistachio muffins remain soft for up to two days, out of the fridge (better if under a cake dome).
