Storage: The pumpkin and ricotta fritters can be kept in the refrigerator in an airtight container for up to two days.

Tips and variations: For a Vegetarian version you can omit the Parmesan. If instead you prefer a cheesy touch, you can add a small piece of scamorza inside. You can also bake the fritters in the oven at 400°F for 15 minutes.
