Super Quick Bundles , a super easy recipe. Made with: flour, plain yogurt, and instant yeast. I also recommend trying the semolina flour flatbreads and the Apulian flatbreads, although the latter require longer rising times, but I assure you it’s worth it! Today, I’m introducing you to quick flatbreads, incredibly soft and delicious, perfect for a tasty snack or an appetizer. You can fill them with sweet or savory fillings depending on your taste and occasion. In my version, I cooked them in a pan, but you can also bake them or use an air fryer if you prefer. Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup plain yogurt
- 1 1/2 tsp salt
- 1 1/2 tbsp extra virgin olive oil
- 1 tbsp instant yeast for savory preparations
- 4 oz prosciutto (or cooked ham)
- as needed sesame seeds
- 2 3/4 oz stracchino cheese
- as needed olive oil
How to Make Super Quick Bundles
In a large bowl, pour in the sifted flour and yeast. Make a well in the center with a fork, then add the yogurt and start mixing. Alternatively, use a stand mixer with the dough hook attachment.
Add two pinches of salt and knead everything until you get a smooth and homogeneous dough that no longer sticks to your hands.
Proceed by transferring the obtained mixture onto a floured work surface, then divide into 12 balls. Next, using a rolling pin or your hands, roll them out into discs.
Fill half of the discs (6 pieces) with prosciutto and stracchino cheese, then cover with the remaining discs.
Seal the edges with a fork and transfer the small bundles to the air fryer.
Spray with a few drops of oil and decorate with sesame seeds. Cook in the air fryer for 10 minutes at 375°F.
Storing Super Quick Bundles
You can store them in a food bag until the next day out of the fridge. Alternatively, you can freeze them for up to three months after cooking and cooling completely. Once thawed, to regain softness, spray the surface with water and heat them in the microwave or air fryer. You can fill them as you prefer, with other meats and cheeses, or in a vegetarian version with grilled or sautéed vegetables.
