Super soft buns with cherry tomatoes, perfect for buffets and birthday parties, but also ideal for snacks or appetizers. Ingredients
- 1 2/3 cups semolina flour
- 2 1/2 cups all-purpose flour
- 2 tbsp extra virgin olive oil
- 2 1/4 tsp active dry yeast
- 2 tsp salt
- 1 1/4 cups water
- 3.5 oz cherry tomatoes
- to taste salt
- to taste extra virgin olive oil
- to taste oregano
Steps
To prepare the dough for the buns, take a large bowl, and add the flours and yeast. Mix everything with a fork (or with a mixer).
Continue by pouring warm water, a little at a time, then add the oil and salt. Knead by hand until you obtain a soft and elastic dough.
Transfer the dough into a bowl and cover it with plastic wrap, letting it rise for at least 2 hours in the oven with the light on.
After the rising time, turn the dough out onto a floured surface.
Then make buns of 120g to 140g each. Let them rest for 30 minutes. Roll them out, roll them up, giving them a slightly elongated shape, and let them rest another 30 minutes.
Fill with halved cherry tomatoes, placing them in the center of the dough, pressing gently.
As a last step, season with a pinch of salt, oregano, and extra virgin olive oil.
Bake in a static oven at 356°F for about 20 minutes.
Storage
You can store the super soft buns for a couple of days in a paper bag. You can freeze them after baking.
Variations
Instead of cherry tomatoes, you can replace them with olives or flavor them with oil and rosemary.
