- 2 tablespoons potato starch (30 g)

How to Make the Super Soft Cake with Mascarpone and Jam
In a large bowl, work the mascarpone with the sugar, then add the eggs and mix until well combined.
Add the flour and baking powder, mix again until the mixture is smooth and creamy.
Pour the water into the batter while continuing to mix.
Take a 9-inch pan, then wet a sheet of parchment paper, squeeze it out, and place it at the bottom of the pan; pour the batter and some jam (not too much) on top.
Swirl the jam with a toothpick. Bake the cake in a preheated oven at 350°F for about 40 minutes in static mode.
Remove from the oven and let it cool completely; you will notice it will shrink a bit, but don’t worry. If you like, sprinkle with plenty of powdered sugar, your Super Soft Cake with Mascarpone and Jam.
