Ingredients

  • 9 oz carrots (washed and cleaned)
  • 3 eggs
  • 3/4 cup almonds
  • 1 pinch ground cinnamon
  • 1 cup sugar
  • 1 orange
  • 1/3 cup vegetable oil
  • 1 2/3 cups all-purpose flour
  • 1 packet baking powder

How to Make the Super Soft Carrot Cake

  • Chop the carrots in a food processor, and with the help of a sieve, drain any excess liquid, then set them aside.

  • Chop the almonds and set them aside as well. Next, in a large bowl, beat the eggs with the sugar, orange zest, and cinnamon.

  • Add the oil, carrots, almonds, flour, and baking powder, then mix everything well.

  • Pour the mixture into a 9.5-inch mold lined with parchment paper.

  • Bake the super soft carrot cake and bake at 350°F with the static mode for about 50 minutes.

  • Remove from the oven and let it cool slightly before dusting with plenty of powdered sugar.

Storage and Tips for the Super Soft Carrot Cake

The carrot cake can be stored under a cake cover for up to 3 days. If you want to make this dessert even more delicious, you can add chocolate chips right before baking the cake. I recommend dusting the chocolate with flour and using a sieve to remove the excess flour.
