Ingredients

  • 1 sheet puff pastry
  • 7 oz cups heavy cream
  • to taste fresh fruit

Steps

  • Start by rolling out the puff pastry on a work surface, then use a 4-inch cutter to make circles. You will get about 7 discs, and with the scraps, you can work it and roll it out again with the rolling pin.

  • Fold each circle in half, without pressing too hard on the fold (otherwise they will open too much during cooking). Brush the surface of each shell with beaten egg.

  • Use a smooth blade knife to make incisions without going too deep. Bake in a preheated static oven at 392°F for 10 minutes, the surface should be golden brown.

  • In the meantime, whip the cream with a tablespoon of powdered sugar. When the shells are warm, cut them with a smooth blade knife, as if they were sandwiches.

  • Fill with whipped cream and fresh fruit.

  • Sprinkle generously with powdered sugar.

Storage and Tips for Sweet Puff Pastry Shells

They can be stored in the refrigerator well covered with plastic wrap until the next day. You can also fill them with cow ricotta, sugar, and flavors, or with pastry cream. If you don’t want to use fresh fruit, you can also try with sour cherries.
