Ingredients

  • 1.1 lbs veal rump (or fillet)
  • 1 clove garlic
  • 2 tbsps extra virgin olive oil
  • 1 sprig rosemary
  • 14 oz mushrooms
  • 4.2 cups vegetable broth

How to Make Veal Roast with Mushrooms

  • In a pot, pour the olive oil together with a clove of garlic, then place the meat.

  • Brown well on all sides, without piercing the meat, use two wooden spoons to help.

  • Deglaze with white wine and let it evaporate. Season the roast evenly with salt and pepper, then add the hot broth until it covers about half, continue cooking for 40 minutes turning the meat occasionally.

  • Add the mushrooms (I used frozen ones), adjust the salt and continue cooking for about another 15 minutes or until the mushrooms are well cooked. Once the meat is cooked, wrap it in aluminum foil and let it cool. Slice thinly and serve with mushrooms.

Tips and Storage for Veal Roast with Mushrooms

It is recommended to consume the meat once it is ready, so you can enjoy it while it’s still tender. However, if you prefer, you can store it for a maximum of a couple of days in the refrigerator, ensuring it is covered with plastic wrap.
