Ingredients
- 1/2 cup Greek yogurt
- 3 eggs
- 1/2 cup + 2 tbsp granulated sugar (about 120 g)
- 6 tbsp vegetable oil
- 2 cups all-purpose flour
- to taste lemon zest
- 2 cups strawberries
- 1 packet baking powder
How to make Yogurt and Strawberry Cake
In a large bowl, beat the eggs with the sugar and the grated lemon zest.
Add the yogurt and the oil, then finally add the flour and baking powder; mix all the ingredients together.
Fold in the strawberries cut into pieces; if you like, you can dust them with a little flour so they won’t sink to the bottom of the batter while baking.
Pour the batter into a greased and floured 9.5–10.25 inch pan (24–26 cm). Slice the remaining strawberries and decorate the surface of the cake. Bake in a preheated static oven at 356°F for about 30 minutes or until golden.
Storage for yogurt and strawberry cake
You can keep the cake under a cake dome for up to 3–4 days. You can add a teaspoon of vanilla extract to the batter, or white chocolate chips. If you don’t have plain Greek yogurt, you can also use strawberry-flavored yogurt.
