Zucchini fritters is an easy quick recipe, perfect for impressing if you have guests for lunch. Soft and tasty, ideal to serve as an appetizer or a light main course.
There are many variations, but usually the base consists of zucchini, eggs, and Parmesan cheese.

Ingredients
- 0.77 lbs zucchini
- 1 clove garlic
- 2 tbsps extra virgin olive oil
- 1.41 oz grated Parmesan cheese
- 3 tbsps breadcrumbs
- to taste salt
- 1 egg
How to Make Zucchini Fritters
Cut off the ends of the zucchini, then dice them.
At this point, cook in a pan with a drizzle of oil and garlic for about 15 minutes.
Once cooked, transfer the zucchini to a large bowl, then add the Parmesan, salt, breadcrumbs, and egg, mix and mash with your hands.
At this point, pour the mixture into greased and breadcrumbed molds.
Add a piece of cheese to the center of each mold.
Sprinkle the top with Parmesan and breadcrumbs, and cook in an air fryer for 20 minutes at 374°F. Remove from oven and turn out onto a serving plate, garnish with basil and serve hot.
Storage and Tips for Zucchini Fritters
They can be stored in an airtight container until the next day. An interesting variation could be adding a small boiled potato to the mixture or adding cold cuts like salami or bacon.
