The 5-Minute Christmas Cake (without butter and lactose-free)
- 2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup coconut flour
- 2/3 cup sugar
- 6 1/2 tbsp rice oil
- 2 eggs
- 1 cup soy yogurt
- 1/3 cup chocolate chips (mixed)
- 1/3 cup water (warm)
- 1 packet baking powder

- 1 Hand whisk
- 1 Cake pan 9 inches in diameter
Preparation of the 5-Minute Christmas Cake
Preheat the oven to 356°F
– Pour the sifted flour into a bowl, add cocoa, baking powder, and mix together.
– In another bowl, pour the eggs and sugar; then add oil, water, and yogurt, mixing briefly.
– Pour the dry ingredients into the liquids; add the coconut flour and mix briefly (with either a hand whisk or electric ones). Finally, add the chocolate chips.
– Grease and flour the cake pan, then fill it with the batter and decorate the surface with chocolate chips.
– Bake for about 35’/40′ always doing the toothpick test.

– I don’t like coconut, what can I use instead?
– Use 2 1/4 cups of flour
– Why do you use type 1 flour?
– It’s a bit less refined; but if you prefer, you can use all-purpose flour
– Can I use butter instead of oil?
