Almond and coconut truffles, better known as Raffaello, are delightful treats made in just a few minutes with a few ingredients and no baking.
Initially created by the confectionery company in the summer to replace pralines like baci or rocher, they originally feature a wafer shell with a soft coconut center and an almond.
Some find them slightly cloying; personally, I have always liked them because I love both coconut and almonds, so trying to replicate them was really easy.
So the ingredients needed to make them are wafer cookies, peeled almonds, coconut, and white chocolate.
Some add mascarpone, some yogurt, and some prefer to add nothing.
I used ricotta instead of mascarpone and didn’t add any sugars because the wafers inside provide just the right amount of sweetness.
Since they are made in just a few minutes, I prepared them a few days ago for the usual office meeting (yes, it’s now a weekly appointment!!) and they were literally devoured!

Ingredients
- 2 1/2 shredded coconut
- 1/2 cup ricotta
- 3 1/2 oz white chocolate
- 4 1/2 oz wafer (vanilla flavored)
- 21 blanched almonds
- shredded coconut (to taste)
Steps
– Finely chop the wafers and melt the white chocolate.
– Pour the ricotta into a bowl and then add the wafer crumbs and the cooled chocolate; mix and also add the shredded coconut.
– Take a small amount of dough, flatten slightly, and place an almond in the center. Close into a ball and then roll in shredded coconut.
– Store in the fridge.
