Almond and Date Truffles

No added sugars, gluten-free, and ready in just a few minutes, the almond and date truffles are addictive.

There are many recipes online, some require the use of oil, others protein creams that are currently very trendy, or the use of other ingredients; however, these are made with only 3 ingredients: almonds, dried dates, and cocoa.

You can really make them in just a few minutes and there’s no need to refrigerate them because all the ingredients are dry.

Then, if you want to make them a bit more elegant, you can dip them in melted chocolate or roll them in sprinkles; the only thing I recommend is, being also gluten-free, ensure any additional ingredients are suitable.

In short, a snack or hunger-buster to take to the office that satisfies without making us feel guilty.

Ingredients

  • 1.4 oz almonds (with skin)
  • 4.2 oz pitted dates
  • 2 tablespoons unsweetened cocoa powder (or regular)
  • unsweetened cocoa powder
  • ground cinnamon (to taste for flavoring)
  • sugar-free dark chocolate (to coat the truffles)
  • almond sprinkles
  • hazelnut sprinkles

Steps

  • – Place the chopped dates (so the blades do not get damaged), almonds, and cocoa in the food processor and blend until a compact and slightly sticky dough is obtained.

  • – Roll small mounds of dough between your hands and then coat them in cocoa. Remove the excess and serve.

Notes:

– The size of the almond and date truffles is up to you; if you need to make them larger or more numerous, double the quantities.

– They keep in a jar at room temperature.
