Ingredients

  • 2 cups apples
  • 2 cups blanched almonds
  • sesame seeds
  • ground cinnamon
  • orange zest (or lemon zest)
  • sliced almonds

Tools

  • Food Processor

Steps

Preheat the oven to 340°F

  • – Wash, peel, and dice the apples. Place them in a small pot with a little water and a pinch of cinnamon; cover and cook for about 10 minutes

  • – Meanwhile, grind the almonds almost to a flour. When the apples are cooked (check that a fork easily pierces the pieces), mash them with a fork (or blend them) to make a pulp. Then combine the apple pulp with the ground almonds.

  • – Mix the two ingredients, then moisten your hands and form mounds to place on a baking sheet lined with a silicone mat or parchment paper, after rolling them in sesame seeds.

Bake in a preheated oven at 340°F for about 15 minutes

Tips for Apple and Almond Cookies:

– You can use hazelnuts or unblanched almonds instead of the blanched almonds.
