Apple and Pistachio Nuggets

The apple and pistachio nuggets without eggs, gluten, added sugars, and fats are small cookies perfect for breakfast or a guilt-free snack.

I made them a few days ago after making the apple and almond ones by Dr. Berrino, because I realized long ago that we can, or rather we must, reduce sugars.

So, at least for breakfast, I try to limit the sweetener only in my coffee with milk… then I usually don’t consume other sweets during the day… except for the recommended portion of fruit.

It’s true, there’s the Sunday treat that’s part of the indulgence I allow myself, and usually, you know, I switch from pies to cakes…

So back to my apple and pistachio nuggets, I had some chestnut flour about to expire, so I thought of using it to make cookies, which I must say are pleasant to eat because chestnut flour is slightly sweet… then there are apples and the ever-present cinnamon, and finally, a nice roll in pistachio granules.

In short, cookies made with just 3 ingredients (excluding a pinch of cinnamon), that start our day with good humor.

Ingredients

  • 1 apple
  • 0.5 cup chestnut flour
  • 0.33 cup pistachio granules
  • ground cinnamon (to taste)

  • 1 Blender

Steps

Preheat the oven to 340°F either convection or static.

  • – Peel an apple and cut it into thin slices or dices and cook it in a small pot with 2 tablespoons of water and cinnamon to taste. Cover with a lid and cook until the slices are soft (about 5 minutes on low flame).

  • – Place the cooled apple slices in a blender or food processor and puree, then add the chestnut flour in the same container and blend until combined. The final dough should not stick to your hands (you may need less than indicated in the ingredients as it depends on the moisture of the apple puree).

  • – Form balls slightly larger than a walnut, place them on a baking mat or parchment paper, gently flatten, and then roll them in pistachio granules.

  • – Bake for about 10 minutes at 340°F

    – Absolutely; from common all-purpose flour if there are no specific issues to oat, hazelnut, almond flours, etc.
