Let’s return to healthy breakfasts with bran and dried fruit cookies, without added sugars and also good for dipping.
It is now well known that by changing my approach to food a bit, preferring less refined ingredients or healthier foods, I often make at home everything that allows me to enjoy starting from breakfast, (which is essential) products without added sugars, whole grain but still satisfying in terms of flavor.
Now, having put aside swimsuits and parasols, I have returned to old habits (because on vacation some little indulgence, especially in Sicily, was inevitable) and so, as much as possible, away with added sugars and full steam ahead with healthy ingredients like, for example, bran.
These cookies vaguely resemble the taste of ‘grancereals’, but having used applesauce instead of cane sugar, which I have still indicated among the substitutions, they are less sweet.
Easy dough and all in one bowl! All that remains is for you to try them.

Ingredients
- 3/4 cup type 1 flour
- 2 1/4 cups oat bran
- 1/3 cup applesauce (or 1/4 cup – 1/3 cup brown sugar)
- 3 1/2 tbsp extra virgin olive oil
- 1/4 cup egg (1 medium)
- 1 egg yolk
- Half teaspoon baking powder
- 3 tbsp tbsp raisins
- 1/4 cup peanuts
- 1 tbsp almonds
- 1 tbsp hazelnuts

Steps
Preheat the oven to 350°F
– Pour the dried fruit into the chopper cup and chop coarsely with a few pulse turns.
– Pour the sifted flour, bran, a pinch of baking powder, and dried fruit into the bowl.
– Add the egg, egg yolk, oil, and applesauce (or brown sugar). Mix until you get a rather coarse dough.
– Move the dough to the floured work surface, roll it out with a rolling pin not too thin, and cut with a cookie cutter. Place the bran and dried fruit cookies on the tray lined with baking paper or micro-perforated mat and bake for about 15 minutes. They should remain slightly soft, so when they cool, they will have the right consistency.
Storage and Tips:
– They can be stored in a cookie container or glass jar for many days.
– You can also choose to use dried red fruits instead of raisins, or use only one type of dried fruit among those listed, respecting the quantities.
