Ingredients

  • 7 oz dark chocolate
  • 3.5 oz milk chocolate
  • 3.5 tbsp butter
  • 0.5 cup fresh whipping cream
  • 0.25 cup unsweetened cocoa powder
  • cherries in syrup (optional)

Steps

  • Chop the two types of chocolate with a knife and set aside.

    Place a pot on the stove that can contain the bowl for the bain-marie, with 1 inch of water and bring it to a boil.

  • – Pour the two chocolates, cream, and softened butter into a single bowl and as soon as the water on the stove reaches a boil, place the bowl inside (be careful not to let water droplets in) and melt the butter and chocolates.

  • – Once the ganache is obtained, cover with cling film and let it cool at room temperature, then place the bowl in the fridge.

  • – Retrieve the bowl with the now pasty ganache and take small amounts of the mixture; place a well-drained cherry in the center, close the ball, and roll it in unsweetened cocoa. If you don’t like cherries, just form the balls with the ganache and roll them in cocoa. Store in the fridge.

Notes:

– To best enjoy the truffles, take them out of the fridge at least 10 minutes before.

– They can be stored for 4-5 days in a closed glass container.
