Creamy Chocolate Liqueur.
This is the time to start thinking about what to prepare for the upcoming holidays: nougats, various cookies, liqueurs… and the creamy chocolate liqueur is one of those perfect to keep in the fridge, bar cabinet, or to gift.
The chocolate liqueur, easy and quick to make, requires really few steps, it’s an excellent after-dinner drink to serve cold or at room temperature to accompany various sweets, especially those with chocolate which are difficult to pair, and it is a valid alternative to the evergreen Limoncello. Moreover, it requires a shorter ‘resting’ time compared to many others.

Ingredients
Version with and without Thermomix
- 4.6 oz pure alcohol
- 1.1 cups unsweetened cocoa powder
- 2 cups sugar
- 2 cups whole milk
- Mixer Thermomix
Preparation
Regular Version:
– In a saucepan, sift the cocoa, add the sugar, and slowly pour in the milk; stir to remove any lumps and place over medium heat.
– Let it simmer, always stirring with a whisk until you can no longer hear the sugar (10-15′). Turn off the heat and let it cool covered with plastic wrap in contact with the surface to prevent a skin from forming (as with custard).
– Add the alcohol and bottle it; place in the fridge and let it rest for a week.
Thermomix Version:
– Sift the cocoa, mix with the sugar, and place everything in the bowl along with the milk. Speed 4, 194°F for 15′.
– Let it cool completely and add the alcohol: 20” speed 4.
– Pour into bottles and place in the fridge.
– Wait at least a week (the longer it rests, the better the flavor), then shake gently before pouring it into glasses.
Storage:
– Keep refrigerated.

FAQ
Can I increase the sugar by 3.5 oz and the milk by 3.5 oz to make it more liquid?
Yes, you can increase the milk. However, 3.5 oz + 3.5 oz will make the liqueur much sweeter and will lower the alcohol content too much. If you just want a bit more fluidity, better to add only +3.5 oz of milk without increasing the sugar.
