Ingredients

for a rectangular baking tray approximately 12×9.5 inches

  • 3 eggs (medium)
  • 2/3 cup all-purpose flour
  • 2/3 cup sugar
  • 1/3 cup chocolate chips
  • vanilla (in seeds, powder, or extract)
  • 7 oz Nutella®
  • powdered sugar (to taste)

Tools

  • Electric mixer
  • 1 Spatula
  • 1 Baking tray 10×12

Steps

Use eggs at room temperature and preheat the oven to 356°F

  • – Separate the egg whites from the yolks and beat the egg whites until stiff. In another bowl, beat the yolks and sugar until the mixture becomes light. (if the eggs are at room temperature, both whip up in a few minutes)

  • – Pour the sifted flour into the yolks and mix well with the spatula. If you are using vanilla, now is the time to add it to the mixture.

  • – Gradually, add the beaten egg whites and mix gently with upward movements.

  • – Add the fridge-cold chocolate chips and mix gently.

  • – Line the baking tray with parchment paper and pour the mixture. Level it and bake at 356°F for no more than 10/12 minutes. Then take it out.

  • – Heat the jar of spreadable cream in a bain-marie so it’s easier to spread, and then pour it over the cookie dough. Spread it out and then roll it up.

  • – Gently wrap the creamy cookie roll in a sheet of parchment paper and let it rest for about an hour.

Notes:

Quantities for a larger roll:

5 eggs – 1 1/3 cups all-purpose flour – 1 1/3 cups sugar – 2/3 cup chocolate chips. Larger jar of Nutella.

    – Yes, do it like this: 1/3 cup flour and 3 tablespoons hazelnut flour or ground hazelnuts.
