Crunchy Chocolate Muesli

The crunchy chocolate muesli without added sugars or fats is made in just a few minutes and lasts for many days (of course, it depends on how many people eat it..)

A recipe born by mistake, if you will, because I needed to make some ‘snack’ bars to take to the office.. but believe me, it revolutionized my breakfasts!

We all know muesli, it’s a crunchy, sweet, and filling granola; perfect for nibbling, adding to yogurt or milk.. but it has one flaw: it’s always so sweet!

My favorite has always been the one with hazelnuts and chocolate pieces, but the cost was excessive for the box’s content and it hardly lasted 3 days when my son ate it too.. so I stopped buying it!

But since my diet changed and I’ve been trying to reduce sugars, I started, as you know, to make granola at home and many other perfect cookies for breakfast and beyond, made with less refined ingredients, and so here we are with the failed bars recipe that became an extraordinary crunchy chocolate muesli without added sugars.

And I’ll tell you in advance that I’ve ordered sugar-free chocolate chips so I can be really sure that the only sugars present are from the apple. (obviously, if you have them, use them!)

Ingredients

  • 2 1/2 cups whole rolled oats
  • 2 oz blanched whole hazelnuts
  • 1/2 cup apple sauce
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup dark chocolate chips

Steps

  • – Put the hazelnuts in a food bag and crush them coarsely with a rolling pin; or chop them. Add them to the oats placed in a large bowl along with the cocoa.

  • – Add the chocolate chips, mix, then pour in the apple sauce; mix again and pour the mixture onto the baking tray lined with parchment paper (I dampened the tray to adhere the paper well). Level with a spoon and bake at 350°F for about 18’/20′ and then let it cool in the oven.

Variations:

The apple sauce can be replaced by cooking a washed, peeled, and diced apple in a little water until they are soft. Then mash or blend them with a fork.

Instead of hazelnuts, you can use other nuts like almonds or pistachios. I advise against walnuts as they may become bitter during cooking.
