Ingredients

  • 1.1 lbs zucchini
  • 1 egg
  • 4 tbsps whole wheat flour (or all-purpose or rice flour)
  • pepper
  • 1 pinch fine salt
  • 1 tsp mixed seeds
  • extra virgin olive oil
  • cherry tomatoes
  • 2.8 oz smoked scamorza cheese
  • 1 zucchini
  • fine salt

Steps

  • – After washing, cleaning, and grating the zucchinis, put them in a bowl with salt to drain the liquid for about an hour. Squeeze the zucchinis or wring them in a cloth to extract the liquid.

  • – Season the zucchinis with the egg, a generous sprinkle of pepper, and flour. Mix well and then pour this ‘dough’ onto a baking tray lined with parchment paper.

  • – Shape it round by using a flat plate or a cake ring, drizzle with oil, and sprinkle with mixed seeds. While it bakes at 356°F for about 10/12 minutes, grill a small zucchini and set aside.

  • – Take the zucchini base out of the oven, top with scamorza cheese, grilled zucchinis, and halved tomatoes, season with a bit of salt, and return to the oven until the cheese is melted.

    Serve hot or warm.
