Flavorful Sicilian Baked Potatoes

The flavorful Sicilian baked potatoes are a side dish that wins over with simplicity and the Mediterranean aroma released during cooking.

This might not be the original recipe, but there are many versions online, and as always, everyone personalizes according to their own tastes. In fact, I have slightly adapted it, taking inspiration from Benedetta Rossi’s version but making it more personal in proportions and seasoning.

The recipe is very easy and consists of potatoes, canned tuna in oil, tomatoes, and herbs… all in the oven or air fryer and then on the table!

It’s prepared in a few steps, and the result is guaranteed.

A flavorful dish that can also be prepared in advance and is perfect when you have many people at the table. So make a big tray of flavorful Sicilian baked potatoes because they’ll ask for seconds!

Ingredients

  • 5.3 oz canned tuna in water (or in oil)
  • 10.6 oz potatoes
  • 3.5 oz cherry tomatoes
  • 0.7 oz pickled capers
  • pitted Peranzana olives
  • dried oregano
  • extra virgin olive oil
  • fine salt

Steps

  • Slice the potatoes not too thin after washing and peeling them, and place them in the pan lined with lightly oiled parchment paper underneath, trying not to leave empty spaces. Season with oil and a pinch of salt and bake in a preheated oven at 375°F for about 20 minutes.

  • Meanwhile, drain the tuna and cut in half the already washed cherry tomatoes. Season the potatoes with flaked tuna and tomatoes.

  • Add the capers and olives as well. There is no specific order, the important thing is to distribute all the ingredients evenly.

  • Season generously with oregano and salt. Drizzle a little oil.

  • Cook for another 10 minutes at 375°F, then turn off and serve.

Advice:

If desired, you can sprinkle breadcrumbs or Parmesan before cooking.

In the air fryer, calculate approximately 10 minutes at 355°F for the first cooking and another 5 minutes after seasoning the potatoes. Of course, everyone knows their appliances, so adjust accordingly.
