Grandma Pia’s Apple Cake

Today I’m talking about Grandma Pia’s apple cake which like all grandmothers, had her own apple cake!

But not just any cake, like the others, but a dessert with a layer of batter, diced apples and cocoa and another layer; fragrant and delicious.

Grandma Pia was my brother-in-law’s mother and was very good at cooking traditional dishes and cakes, like this one with apples that she often made for my son Marco when he was a child.

A simple, genuine homemade cake but at the same time rich in flavor.

The recipe as it was passed down to us, was written in my famous dessert notebook where I used to jot down all the recipes and photos of desserts I wanted to make or made .. a notebook I still cherish and refer to, although it has now been replaced by the blog.

Ingredients

  • 7 tbsp butter
  • 2 eggs
  • 3/4 cup sugar
  • 7/8 cup milk
  • 2 3/4 cup all-purpose flour
  • 9 oz dark chocolate
  • 2 apples
  • powdered sugar (a sprinkle)
  • unsweetened cocoa powder (a sprinkle)
  • 1 tbsp baking powder
  • raisins

  • 1 Cake Pan 9 inch

Steps

If you decide to use raisins, soak them in a little water with a drop of dessert rum; then when ready to use, drain and pat dry.

  • – Put the soft butter and sugar in a bowl; mash with a fork and then add the eggs, mix with the beaters and then pour in the milk while the beaters are moving.

  • – Pour in the previously sifted flour and (if you deem it necessary, mix with a spatula to avoid flour spreading) mix, then add the baking powder sifting it directly into the bowl and a pinch of cinnamon.

  • Preheat the oven to 350°F

    – Pour about half of the batter into the greased and floured cake pan and distribute diced apples on top, (raisins if used) the chopped dark chocolate, a sprinkle of cocoa, and sifted powdered sugar directly over the chocolate.

  • – Cover everything with the remaining batter and smooth the surface.

    – Bake for about 35 minutes, always doing the toothpick test. Remove from the oven and after about 15/20 minutes, remove the cake from the mold and let it cool completely on a rack.

Notes.

It’s normal for the surface of the cake to crack slightly during baking, but if desired, you can give a light dusting of powdered sugar.
