Mini Caramelized Tomato Tatin

The mini caramelized tomato tatins are perfect to serve with an aperitif.

Today I propose a variation where the cherry tomatoes caramelized with balsamic vinegar create a really fitting contrast and the aroma released during cooking, thanks also to the aromatic herbs, makes the mini tatins ideal to accompany a wine and also suitable for buffets.

Ingredients

  • 1 roll puff pastry
  • 3.5 oz cherry tomatoes (red and yellow)
  • balsamic vinegar
  • honey
  • extra virgin olive oil
  • dried oregano
  • fine salt

  • Pastry Cutter 3.5 inches

Steps:

Preheat the oven to 375°F.

Wash and slice the cherry tomatoes; cut the puff pastry to the size of the flowers to be formed (about 3.5 inches).

  • Spread a sheet of parchment paper on the baking tray and pour oil, balsamic vinegar, honey, and oregano where the tomatoes will be placed.

  • Add fine salt as well.

  • Form the flowers with the tomato slices, alternating the colors.

  • Place a piece of puff pastry on each tomato flower and try to tuck it underneath to prevent the liquids from leaking during cooking.

  • Gently prick the pastry and bake at 375°F for about 15 minutes. Serve hot or warm.
