Mini Towers of Potatoes and Salmon

The mini towers of potatoes and salmon are made with only 3 ingredients and are very tasty.

A perfect appetizer to prepare in advance, which does not require any particular skill, except for thinly slicing the potatoes; a task that, if you have a mandoline slicer, is a breeze.

A scenic appetizer, if you like, which can make a good impression during lunches and dinners, but is also suitable for a buffet.

As said, the main ingredients are 3: the potatoes, the smoked salmon, and the smoked scamorza cheese; then you’ll need water to boil the potatoes, salt, and a bit of oil.

The potatoes, as we will see, undergo a double cooking because they are first boiled and then baked for a few minutes to become crispy chips, while the smoked salmon only needs to be taken out of the package and sliced approximately the size of the potato slices.

Ingredients

  • 3.5 oz smoked salmon
  • 2 potatoes (medium)
  • 3.5 oz smoked scamorza cheese
  • fine salt
  • extra virgin olive oil

Steps

First, wash the potatoes well and scrub them to remove any soil.

  • – Slice the potatoes, not too thin, and then boil them for about 5/7 minutes in lightly salted water. They are ready when a toothpick can pierce a slice without resistance. Drain, pat dry, and place them on a baking tray lined with parchment paper. (The tray is wet so the paper sticks without moving).

  • – Lightly salt and brush each slice with a little oil.

    Bake in a hot oven at 392°F for about 10 minutes until they are slightly colored. Out of the oven, top the potato chips with smoked mozzarella and return the tray to the turned-off oven; with the oven still warm, the mozzarella will tend to melt a bit. (Note that, depending on how many towers you want to make, you should leave some slices without mozzarella because they will go on top of the tower).

  • – Assemble the towers: on a chip with mozzarella, add a slice of smoked salmon, add another seasoned potato slice, more salmon, and finally close with a chip. If desired, you can secure the towers with toothpicks and garnish them with a small dice of salmon.

Notes:

– The towers can be served warm or lukewarm. If you decide to serve them warm, either assemble them just before serving or pass them in the still-warm but turned-off oven for a few minutes.
