The naturally sweet pistachio salami, egg-free and with no added sugars, is an easy and quick dessert to prepare.

It’s a versatile dessert, suitable for any season and occasion, that requires no baking. Stored in the freezer, it’s always appreciated, just like the much-loved chocolate salami without butter, made and remade by many people.

What makes it special compared to others? The fact that it has no butter, like the other, and it uses a “binder” made of milk and corn starch, allowing us to omit the eggs.

Furthermore, since white chocolate is already very sweet and cookies are sweet anyway, I chose not to use any sweetener in the dough, except for a very light dusting of powdered sugar for photographic purposes. This makes the salami very balanced in taste and not at all cloying, and I’m sure it will win you over too.

Ingredients

  • 4 oz white chocolate
  • 3 oz pistachio cream (100% natural without sugar)
  • 3 tbsp rice oil
  • 5 oz tea biscuits (like Oro Saiwa)
  • 2 oz chopped pistachios

  • 1 tsp cornstarch

Steps

  • Pour the sifted cornstarch into a saucepan.

  • Add the milk and stir on the stove until the consistency becomes creamy.

  • Pour the pistachio cream, milk cream, and oil into the previously melted chocolate in a bain-marie.

  • Mix well with a whisk until you get a smooth green cream.

  • Place the cookies in a bowl and crush them without pulverizing (I do it by hand).

  • Pour the green cream over the cookies and add the chopped pistachios.

  • Mix all ingredients well using a spoon.

  • Place the mixture on a sheet of parchment paper and shape it into a salami. To help, you can wrap the parchment paper roll in some plastic wrap and roll on the counter to get a more regular shape. Store in the fridge for about 3 hours.

Tips and Variations

You can also add chocolate chips or, as indicated among the optional ingredients, dried red berries.

Mini version: halve the ingredients and make individual salamis for snacks or gifts.
