You can choose to prepare the batter in advance, refrigerate it, and then cook when ready; or make them, cook, and serve right away.
All this because it’s a really speedy recipe perfect for any time of the year, but it has something extra in the summer when the desire for lengthy preparations decreases due to the heat.
The main ingredients are 2: whole grain rolled oats and zucchini. Then you’ll just need water and a little seasoning.

Ingredients
- 1/2 cup whole grain rolled oats
- 6.76 fl oz water
- 1 small zucchini
- 1/4 cup Parmigiano Reggiano DOP
- nutmeg (to taste)

Steps
– Put the rolled oats and water in the chopper; blend until you get a batter.
– Pour the batter into a plate with the previously grated zucchini, adding a pinch of salt.
– Add the Parmigiano and nutmeg, and mix the ingredients with a fork.
– Heat a non-stick pan without oil and cook the fritters, scooping the batter with a spoon, cooking about 3 minutes per side. Serve hot or cold as desired.
Tips:
If the zucchinis are not firm and therefore contain more water, you can squeeze them in a cloth after grating.
