Pepper and Potato Side Dish

Super tasty, the pepper and potato side dish is made in a few minutes if, like me, you use the air fryer and microwave!

Our dear air fryer comes to the rescue again because this recipe, also known as pipi e patati, a typical side dish from the Calabria region, can be made both in the oven and in a pan..

But in this hot weather, we might not feel like turning on the oven and we don’t want to mess up the kitchen with oil splashes here and there, so our air fryer ensures that the peppers are ready in just under 10 minutes and the potatoes, which I cooked in the microwave, take between 8 and 10 minutes (depending on how big the potato cubes are).

An excellent side dish that can be enriched with olives or capers and is ideal for accompanying steamed fish or white meats.

The cooking of the two vegetables should be done in two stages, but nothing prevents you from trying to put everything together in the air fryer or oven; since I have a small air fryer that wouldn’t allow me to cook peppers and potatoes together, I preferred to use the two appliances, so I experimented a bit

Ingredients

  • 7 oz red bell pepper
  • 7 oz potatoes
  • fine salt
  • rosemary
  • extra virgin olive oil

Steps

  • Wash the pepper, cut it in half, remove the filaments and seeds, and cut it into strips.

    – Put the pieces of pepper in the air fryer, spray with a little oil, and cook at 392°F for 10 minutes (check anyway because each fryer is different; they should slightly brown).

  • – Peel the potatoes and cut them into regular pieces, then place them in the steam basket (for microwave cooking) with a little water and some sprigs of rosemary underneath. Cook for about 8 minutes at maximum power (my 800W) and check with a toothpick or fork that they are done.

  • – Combine the two vegetables in a serving dish, salt to taste, and drizzle with a bit of oil.

    It is excellent both warm and cold.

Tips:

– If you don’t have the steam basket for the microwave, place the potato cubes in a microwave-safe bowl with a bit of water, cover with microwave-safe plastic wrap, and cook for the indicated time.

– If you have a large air fryer, cook everything together, considering that potatoes have a longer cooking time than peppers, so a few extra minutes may be needed.

– They can also be cooked in a single baking tray in the oven at 374°F for about 20 minutes.
