Ingredients
The amount of water is measured for the type of polenta I used, namely the coarse-ground one, which has long cooking times and therefore requires more water than instant polenta.
- 1 cup polenta
- 2 cups water
- tablespoons breadcrumbs
- salt
- extra virgin olive oil
- 1 teaspoon poppy seeds
- spices (for roast or potatoes)
- black pepper

Steps
Mix the polenta with poppy seeds in a plate and wait for the water to reach a boil.
Pour the polenta into the salted boiling water in a steady stream and from that moment cook according to the instructions on the package, stirring with a whisk to avoid lumps.
Spread the cooked polenta on a baking sheet, between two sheets of parchment paper, and roll with a rolling pin until the thickness is uniform (about 1/5 inch). Let the polenta cool at room temperature or, if you have time, in the fridge; this will make it easier to cut.
Take the cold polenta and cut first into strips and then into sticks.
Place the sticks on a baking sheet lined with lightly oiled parchment paper.
Season the breadcrumbs with the chosen spices and pepper.
Brush a little oil on the surface of the sticks.
Roll the sticks in the breadcrumbs.
If you decide to cook the polenta sticks in the air fryer, cook for 10 minutes at 356°F. (The polenta sticks for air fryer cooking were not brushed with oil, but simply rolled in breadcrumbs for specific needs).
If you opt for oven cooking, bake at 375°F (preheated oven) for about 15 minutes, until golden.

Polenta sticks are excellent both hot and cold.
