The quick apple pies with puff pastry are the perfect dessert for those who love the scent of caramelized apples and vanilla, but don’t have time for long dough preparations or elaborate baking.

Making them is very easy: just take ready-made puff pastry rolls, form and prepare a fragrant full-bodied filling of diced apples, sautéed in a pan with brown sugar and vanilla.

Perfect for a snack, breakfast or as an autumn dessert, they can be enjoyed warm or cold, perhaps accompanied by a scoop of vanilla ice cream or a dusting of powdered sugar.

Ingredients

  • 1 roll puff pastry
  • 2 apples
  • 2 tablespoons brown sugar
  • 1 tablespoon extra virgin olive oil

Steps

  • Peel and dice the apples.

  • Pour the oil into a pan, add the sugar, then the apples and vanilla. Cook for 5/6 minutes or until the cubes are soft.

  • Transfer the apple cubes to a bowl and add the pistachio granules and mix. Let them cool slightly before using.

  • Unroll the puff pastry (unfortunately I couldn’t find the rectangular one) and cut the bases using the pastry cutter. Cut the center of the round shapes that will go on top to close, using flower or heart-shaped cookie cutters. Use the pastry scraps to make the leaves and stems for the apples.

  • Moisten the edges of the bases with a little milk and fill with a spoonful of apples. Also add the leaves and stems to each base, pressing lightly.

  • Close each “apple” with the disc cut in the center and, with a fork, seal around. Brush the surface with a little milk, optionally sprinkle with a bit of brown sugar, and bake in a preheated oven at 350°F for about 20 minutes. Serve hot, warm, or cold.

Tips:

Serve them warm with a scoop of ice cream or custard: they will become a patisserie dessert.
