Fresh, quick, and tasty, raw zucchini pesto is a perfect dressing now that the heat is starting and there’s not much desire to prepare sauces!
You don’t even need to boil them first, so we have the right consistency because the zucchinis haven’t absorbed the water!
I didn’t use nuts because I couldn’t, but to give it flavor, I added fresh mint, basil, and parsley along with parmesan and oil!
I’m sure my raw zucchini pesto will win you over! Try seasoning potato gnocchi or any pasta, and you’ll see!!

Ingredients
Raw Zucchini Pesto
- 10.5 oz zucchinis
- 5 leaves basil
- 2 leaves mint
- 2 tbsp almonds
- 1 pinch fine salt
- to taste black pepper
- to taste extra virgin olive oil
- 0.7 oz Parmigiano Reggiano DOP (about 2 tablespoons)

Preparation of raw zucchini pesto:
– Wash, trim the zucchinis, and cut them into slices. Add the almonds, parmesan, and basil and mint leaves.
– Add pepper, the pinch of salt, and the oil then start the chopper until you get a not too fluid consistency.
– Put it directly in the pan where you will sauté the pasta or gnocchi; extend with a few ladles of cooking water, toss and serve.
Tips:
– With this amount, I seasoned 3 servings of pasta and the rest, I froze by putting it in a glass jar.
– If desired, you can replace the almonds with walnuts.
