Rustic Zucchini Pinwheels

It’s hard to resist rustic zucchini pinwheels with ham and provolone; a recipe that’s really easy and perfect for buffets or appetizers!

Only 4 ingredients are needed to make them, namely puff pastry or shortcrust, grated zucchini, and then ham and melted cheese, which in my case is smoked provolone.

I’ll also tell you that this is just a suggestion, an idea because you can also use speck and omit the cheese if you’re lactose intolerant, because they still turn out very tasty!

And the cooking? If you have an air fryer, they’re ready in 15 minutes… otherwise, with 5 more minutes in the oven, you’ll get golden and crispy pinwheels.

Ingredients

  • 17.6 oz shortcrust pastry
  • 1 zucchini
  • 3.5 oz cooked ham
  • 3.5 oz smoked provolone

Tools:

  • 1 Air Fryer

Steps

  • – Unroll the pastry and cover it with slices of smoked provolone; grate the zucchini into julienne strips directly onto the cheese slices and finish with the ham slices.

  • – Roll up the pastry, seal well, and place in the freezer for about 15 minutes (this will make slicing easier)

  • – Preheat the air fryer for 5 minutes at 374°F or the oven, bringing it to 392°F

    – Slice the roll and place the rounds in the fryer basket lined with parchment paper. Lightly brush the top and cook for about 15 minutes.

    – If using the oven, line the baking tray with parchment paper, brush the rounds, and bake for about 20 minutes.
