Christmas is coming, bringing with it ideas and inspirations to present our dishes in different and captivating ways.
My proposal, inspired by a recipe I saw in a magazine, is a shrimp basket made of sandwich bread filled with shrimp, celery, and green apple.
I’ll tell you right away that they are very simple to make but impressive and tasty; the pairing with the slightly acidic green apple perfectly complements the flavor of the shrimp.
Don’t hesitate to propose them during your meals because they will be a hit!

Ingredients
Shrimp Baskets
- 2 slices long sandwich bread
- 8 shrimp
- celery (one stalk)
- Half lemon juice
- extra virgin olive oil
- 1 pinch salt
- 1 green apple
- pomegranate (a few seeds)
- 2 yellow cherry tomatoes
- lamb's lettuce
Preparation of Shrimp Baskets
– With a flower-shaped cookie cutter, or round, cut the slices of sandwich bread, slightly flatten them with a rolling pin and brush them with a mixture of water and oil (you can also moisten with just water).
– Place the slices in muffin molds and bake for a few minutes under the grill (the edges should be slightly golden).
– Blanch the shrimp for a couple of minutes, after removing shells and veins; drain them and set aside 4 whole ones, chop the rest into pieces.
– Dice the celery, yellow cherry tomatoes, and apple (it’s preferable to sprinkle the apple with a little lemon juice to prevent browning).
– Combine the ingredients on a plate, season with salt and pepper, add a teaspoon of oil; gently mix and prepare the baskets.
– Place a few leaves of lamb’s lettuce at the bottom of each basket, fill with a spoonful of the prepared ingredients and decorate with a whole shrimp
Tips:
– If you don’t have pomegranate, decorate the baskets with pink peppercorns;
– If you prepare them well in advance, cover them with cling film and store in the fridge
