Ingredients

  • 3/4 cup oat flour
  • 1/2 cup whole grain rice flour
  • 2 tsp baking powder
  • 1/2 tsp spirulina

Steps

Preheat the oven to 340°F

  • Pour the sifted powders, spirulina, and baking powder into the bowl; mix and set aside.

  • In another bowl, put the yogurt, eggs, and sugar (when I redid the recipe I used half granulated and half cane sugar). Combine the ingredients.

  • Pour the powders into the liquids and mix only as much as necessary.

  • Add the chocolate chips to the mixture, leaving some aside for decoration.

  • Fill the muffin cups 2/3 full and add chocolate chips on top.

  • Bake in a preheated oven at 356°F for about 20 minutes.

Bimby Variant

Place in the bowl flours, spirulina, baking powder, and salt: 5 sec / speed 4 → set aside.

Add eggs, sugar, yogurt, oil, vanilla: 30 sec / speed 4.

Add the dry ingredients: 20 sec / speed 3, using the spatula if needed.

Add the chocolate chips: 10 sec / reverse / speed 2.
Pour into muffin cups and bake as per procedure.

Storage:

In an airtight container, at room temperature: up to 3 days.

They can be frozen and thawed as needed.

Tips and Variations

Want them to rise even better in height? You can replace 15-20 g of the rice flour with Manitoba flour, only if you already have it. It increases structure and holds moisture.

Chocolate chips can be replaced with hazelnut shavings or crumbs for a crunchy note.

Berry yogurt can be replaced with raspberry, strawberry, or banana yogurt for a slight change in taste; or plain.

You can lightly sprinkle sifted spirulina on the surface: it will give a unique visual effect.

You can use all cane sugar, mix cane and granulated, or all granulated.

  • Can I use only one type of flour?

    You can replace one of them with type 1 flour or light wholemeal flour, but the oatmeal + rice mix gives a softer result.
