Soft Tarts with Cream and Berries

With a soft base that melts in your mouth, a heart of velvety custard, and the fresh note of berries, these treats are a great choice for any special moment. Perfect for a tasty snack or a refined dessert, the soft tarts are easy to prepare because the dough does not need to rest in the fridge like regular tarts, and this is a great advantage.

In fact, to make them, I used the dough from the soft tart, dividing it into individual molds and filling with the tried-and-true custard that everyone now knows, decorating it as in pastry shops.

In this article, I will show you how to prepare them, step by step, with the Thermomix for soft tarts with cream and berries that will make your guests happy and satisfy your sweet cravings! But do not worry, because the clever tart dough can also be made with regular electric beaters.

Ingredients

  • 1 egg
  • 1.6 oz sugar
  • 2/3 cup type 1 flour (or 00)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup water
  • 0.1 oz baking powder for desserts
  • vanilla
  • 1 cup milk
  • 1 egg
  • 2.1 oz sugar
  • 0.6 oz cornstarch
  • vanilla
  • lemon zest
  • 3.5 oz raspberries
  • 3.5 oz wild strawberries
  • chopped pistachios

  • Molds clever 4-4.7 inches
  • Food Processor Thermomix TM6

Steps

Prepare the custard the day before and store it in the fridge with plastic wrap on the surface. Procedure, video, and tips can be found here.

  • Pour the egg and sugar into the bowl and blend for 20″ Spiga speed.

  • Add the water.

  • Also pour in the oil and mix for 25″ Spiga speed.

  • Add the flour, baking powder, and vanilla and mix for 50″ Spiga speed.

  • Pour the dough into the greased molds without reaching the edge and bake at 338°F for about 20 minutes. Remove from oven, carefully unmold, and let cool.

  • Fill the tarts from the fluted side with the previously prepared custard.

  • Decorate as desired the soft tarts with raspberries and wild strawberries.

  • Add chopped pistachios and store in the fridge.

Tips:

You can also fill the tarts with strawberries or other fruit depending on the season. You can choose to mix the fruit as I did, or choose a different fruit for each tart.

If you don’t have the Thermomix, you can knead with electric beaters following this procedure.
