… I finally managed to create the cigarette dough!!!
Many may know this technique, but many ignore it: it is a pastry technique that allows us to have beautiful decorations for our desserts and make even a simple dessert elegant or “elaborate.”
It requires few ingredients and doesn’t take much time, but it’s fascinating. And I, as I said, have wanted to make it for years, but then I always gave priority to other desserts.
Now that I understand how easy and fun it is to create, no one can stop me!
With a touch of creativity, you can make beautiful decorations and make the dessert spectacular!!

Ingredients
- 1.75 oz egg whites
- 1.75 oz butter (soft)
- 1.75 oz powdered sugar
- 1.75 oz type 1 flour (or 00)
- as needed food coloring (red)
- 4 eggs
- 3.5 oz sugar
- 2.8 oz type 1 flour (or 00)
- 0.7 oz potato starch
- 1 pinch baking soda
- as needed vanilla (pod seeds or extract)
- as needed lemon zest (grated)
- 1 pinch fine salt
- 14 oz whole milk (or partially skimmed)
- 5.3 oz fresh liquid cream
- 3.5 oz sugar
- 1.4 oz cornstarch (cornflour)
- lemon zest (grated)
- 10.6 oz strawberries
- 3.5 oz fresh liquid cream
- 1 teaspoon powdered sugar
- as needed chopped pistachios
Preparation of the Strawberry Cigarette Dough Roll
– In a bowl, mix the butter with the powdered sugar until you get a smooth cream; add the lightly beaten egg whites alternately with the sifted flour and finally a pinch of coloring (here it depends on the intensity you want to achieve). Mix everything well with a spatula.
– Cut a parchment paper sheet the size of the pan where you will bake the dough and draw on it with a pencil; turn the sheet over with the writing side in contact with the pan.
– Fill a disposable piping bag with the cigarette dough, make a small cut at the end, and trace the drawn designs. (if you are skilled, you can make cones with paper)
– Place the pan in the freezer for at least half an hour.
*Preheat the oven to 428°F
– Whip the egg whites with the pinch of salt and set aside;
– Beat the egg yolks with the sugar until you have a nice light foam, add the sifted powders and with the help of a spatula, lighten the hard mixture at this stage with a part of the egg whites, mixing and gently incorporating the remaining part from top to bottom. Add the flavors.
– Spread the batter over the cigarette dough, trying to level it well and bake in the oven for 4’/5’
– Out of the oven, immediately remove the dough from the pan and roll it on itself to shape it. Wait until it cools completely before handling it.

– Unroll the cake, trim the edges and fill it with the cream, leaving the edges free; garnish with strawberries cut into pieces and roll it on itself gently, perhaps using parchment paper to help. Wrap it with cling film and refrigerate for at least two hours.
– Before serving, decorate with dollops of whipped cream with powdered sugar, strawberries, and chopped pistachios.
