Sweet Message Cookies

The sweet message cookies are a small gift for Valentine’s Day and more!
Tiny and delicious rectangles of shortcrust pastry, folded like an envelope, filled with jam or spread from which many little hearts emerge.
A nice thought, made with our hands and meant for our loved ones, is always welcome, don’t you think?
I got inspired by seeing a photo on Instagram posted by her, and then I kneaded my infallible shortcrust pastry for the envelopes and cocoa for the hearts… and here they are!
So, take some time and make these fantastic sweet message cookies and give them to someone you love.

I find kneading very relaxing and above all, it brings positive vibes when we know our work will make someone happy.

Ingredients

Sweet message cookies

  • 10.58 oz shortcrust pastry
  • 1.76 oz shortcrust pastry (with cocoa)
  • as needed strawberry jam

Preparation of Sweet Message Cookies

  • – For the envelopes, I made a square with a paper sheet of 2.75″ x 2.75″, cut it out, and used it as a template.

  • – Prepare the shortcrust pastry, rest it for a day in the fridge, then roll it out thin and cut out the squares. (if not all is needed, you can freeze it)

  • – Spread a teaspoon of jam on each little square.

  • – Bring the side corners towards the center first, then the bottom one, leaving the top corner open (to simulate the open envelope, otherwise just fold them all towards the center to have the closed envelope).

  • – From the cocoa shortcrust, (of which I made half a dose, removed 25g of flour and added 25g of cocoa) also prepared the day before, cut out many little hearts to attach in various points on the envelopes, pressing them slightly.

  • – Place the tray with the cookies in the fridge for half an hour.

    – Preheat the oven to 350°F and as soon as it’s at temperature, bake the sweet message cookies for no more than 13 minutes.

Tips:

The cookies can be stored in the pantry, closed in a box.

– You can use orange marmalade, or a jam of your choice. Mine is sugar-free for example.
