Ingredients

  • 1 baguette
  • 7 oz carrots
  • 14 oz cod (the heart)
  • extra virgin olive oil
  • fine salt
  • sliced almonds
  • chopped parsley
  • pepper
  • garlic powder (or fresh)

Steps

  • Clean the carrots, cut them into rounds, and boil them in salted water for about 10 minutes or until they offer no resistance when pierced with a fork.

  • Transfer the still-hot carrots into the chopper’s cup, add oil to taste, and a bit of cooking water.

  • Blend until you obtain a cream.

  • Cut the baguette and toast the slices on the grill or griddle.

  • Dice the cod heart.

  • Pour some oil into the pan and add garlic powder or fresh garlic to taste, letting it gently brown.

  • Sauté the cod cubes for a few minutes. Salt at the end and season with chopped parsley.

  • Dress each crostini with the carrot cream and add some parsley.

  • Finish the crostini with the cod dice and sliced almonds, lightly toasted. Before serving, add freshly ground pepper. They are excellent hot, but also delicious cold (not from the fridge) or warm.

Tips:

All preparations can be made in advance and then assemble the crostini shortly before serving, perhaps warming the cream and cod cubes slightly for a few seconds.
