The vegetarian zucchini fritters in a pan are a great vegetarian dish, perfect to serve as a tasty appetizer or to accompany a main course.
Tasty and very easy to make, they can also become a delicious dinner saver by preparing a single omelette. Very few ingredients are needed to bring vegetarian zucchini fritters in a pan to the table: zucchini, breadcrumbs, Parmesan, and eggs… in short, little expense, a lot of yield!
Lately, even though the vegetable is not really in season, I prepare them often precisely because they are easy, quick, and above all really tasty!
Moreover, if you have no dieting concerns, you can enrich them with diced speck or cooked ham.

Ingredients
- 1 zucchini
- 5 tablespoons breadcrumbs
- egg
- 2 tablespoons Parmigiano Reggiano DOP
- salt
- chopped parsley
- pepper

Steps
– Grate the washed and trimmed zucchini with a large-holed grater (1); season with a little salt and let it rest for half an hour.
– Drain and squeeze out the excess water from the grated zucchini (2)
add the egg and mix (3). Add all the other ingredients and mix everything well. (4-5-6-7)
Heat the pan with a little oil, and cook the mixture by spoonfuls. Cook about 2 minutes per side. (8-9-10)
– Serve the fritters hot or cold!
