But do we want to make two whole grain befanini cookies without butter, with our children, before Epiphany takes away all the holidays? Maybe we put them in the stocking along with other homemade sweets… or we munch on them while watching the last movie or cartoon all together!
It’s a very simple shortcrust pastry, slightly soft flavored with rum, that requires only a bowl and a fork to mix, some Christmas-shaped cutters, and lots of colorful sprinkles… so you only need 30′ in total!
The original recipe is from Tuscany and involves the use of butter and simple all-purpose flour, but after all we’ve eaten up to now, trying to save a few calories doesn’t hurt, so I thought of kneading with whole grain flour and rice oil my version of whole grain befanini without butter.

Ingredients
I kneaded for 1 cup of flour, but if you want more cookies, double the doses
- 1 cup whole grain flour (or type 2 or 0000)
- 5.5 tbsp sugar
- 1 egg
- 0.14 oz baking ammonia (or baking powder)
- 3.5 tbsp rice oil (or seed oil)
- 1 tbsp rum
- lemon zest (untreated)
- 1 tsp vanilla (extract or pulp)
- egg white (and colorful sprinkles)
Steps
– Put the egg with sugar in the bowl and beat with a fork; add oil, vanilla, sifted flour, baking ammonia, lemon zest, and rum; form a compact dough (if necessary, add a tablespoon of water).
– Roll out the dough to a thickness of 0.2 inches and cut out cookies with cutters (stars, small trees, etc.), placing them little by little on the silicone mat or a baking sheet lined with parchment paper.
– Brush the cookies with the beaten egg white and decorate with sprinkles.
– Bake at 350°F for 10/12′
