Yogurt Shortcrust Pastry

The yogurt shortcrust pastry, unlike the classic one, contains less butter and is soft because it includes a pinch of baking powder among its ingredients.

If done correctly, it holds its shape even when baked (since the baking powder causes the preparation to rise in the oven).

To show you that it can be kneaded simply and creatively, when I prepared the soft yogurt tart I used the scraps to try out new cookie cutters, and thus these soft cookies were born, perfect for dunking in milk!

Ingredients

  • 2 3/4 cups type 1 flour (or 00)
  • 1 egg
  • 1/2 cup plain yogurt (or any flavor you prefer)
  • 1/2 cup sugar
  • 1/4 cup butter
  • lemon zest
  • 1 pinch baking powder

Steps

  • – In a bowl, whisk the sugar (1) with the egg (2); add the yogurt (3) and soft butter (4).

    Sift the flour with the baking powder directly into the bowl (5).

  • – Add the grated lemon zest (6).

    Quickly knead to form a dough; roll it out on a sheet of parchment paper or plastic wrap (8) and refrigerate for at least 30 minutes

  • – After chilling, roll out the dough on a lightly floured surface, and cut cookies with desired shapes.

    – Bake in the oven for 15 minutes at 338°F

tips

When you roll out the dough, remember it contains baking powder, so it will rise a bit during baking (especially if you are making a tart)
