Ingredients

With these quantities, you will get 5/6 medium crepes. The indicated cooking time refers to a single crepe.

  • 7 oz zucchinis
  • 1.75 oz oat flour
  • 2 eggs (medium)
  • 1.75 oz plant-based milk (or regular)
  • 1 pinch salt
  • basil (a few leaves)

Steps

  • – Wash, trim, and slice the zucchinis into rounds or chunks and place them in the food processor with basil, salt, and egg.

  • – Add the other ingredients and blend until you obtain a batter that is not too thick. (Check the consistency as it may vary depending on the flour)

  • – Grease the pan, heat it, and then cook one scoop of batter at a time.

    – Flip them once, after about 3 minutes, when the edges begin to lift.

Variations:

– You can also use all-purpose flour or whole wheat or spelt flour. The important thing is to measure the liquid; you might need a little more or a little less.

– If you don’t want to use plant-based drinks or milk, you can use water, making them lighter.

– Instead of basil, you can use parsley.
