The artichoke and sausage risotto is a simple and delicious main course, a tasty recipe perfect for lunch or a fancy dinner. It’s now artichoke season, a vegetable I love and enjoy pairing with sausage, so I wanted to use these two ingredients to make a nice risotto. Creamy and very tasty, the artichoke and sausage risotto will conquer everyone. To make it even more flavorful, I used Il Mio Brodo Star – Mixed Meat, a broth as good as homemade, with 100% natural ingredients and no preservatives. It’s ideal for many preparations and it’s really exquisite!

Ingredients
- 12 oz rice
- 10 oz artichoke hearts
- 9 oz sausage
- 1.75 oz Parmesan cheese
- 3 tbsps extra virgin olive oil
- 2 sprigs parsley
- 1 clove garlic
- Half glass white wine
- to taste salt
- to taste black pepper
Steps
The artichoke and sausage risotto is very simple and quick to prepare. First, remove the sausage casing, crumble it, and brown it in a pan, then set it aside.
In the same pan, pour the oil and sauté the chopped garlic, add the artichoke hearts cut into wedges, salt them, and fry them for a couple of minutes.
Add the rice and let it toast for a minute, deglaze with the white wine, and then, pouring in a little at a time of Il Mio Brodo Star – Mixed Meat, cook the risotto until al dente.
When nearly cooked, add some of the browned sausage, grated Parmesan, chopped parsley, black pepper, and mix everything together.
Plate the artichoke and sausage risotto and enjoy!
