The artichoke rustic pie is a savory tart made of puff pastry with a creamy and stringy filling of speck, gorgonzola, and scamorza. I love artichokes and love them even more paired with speck and gorgonzola, so I used these ingredients to prepare a rustic pie that saves dinner, which we adored and devoured in 5 minutes! Ingredients
- 5.3 oz scamorza
- 3.5 oz speck
- 3.5 oz gorgonzola
- 5 artichoke hearts
- 2 tbsp extra virgin olive oil
- 1 clove garlic
- 1 sheet puff pastry
- 1 egg (for brushing)
- to taste salt
- to taste black pepper
- to taste sesame seeds
Steps
The artichoke rustic pie with speck and gorgonzola is very simple and quick to prepare. First, clean the artichokes if you have them whole and take only the hearts, cut them in half. You can also use frozen ones.
Pour the extra virgin olive oil into a pan and brown the garlic clove, add the artichokes, season with salt and pepper, and cook them for 4-5 minutes, stirring often. If using frozen ones, take them out of the freezer an hour before.
Remove the garlic, turn off the heat, add the speck and scamorza cut into pieces, the gorgonzola, and mix everything.
Unroll the puff pastry sheet and fill half of it with the prepared filling, close it by sealing the edges well and folding them inward.
Brush the surface of the artichoke rustic pie with the beaten egg, make small cuts with a knife, add the sesame seeds, and bake it in a preheated oven at 392°F for about 25 minutes, it should be nicely golden.
Notes:
The artichoke rustic pie with speck and gorgonzola can be kept at room temperature for a few hours or in the fridge for a couple of days. Instead of speck, you can use cooked ham or omit it for a vegetarian version. If you don’t like gorgonzola, you can replace it with your preferred creamy cheese (brie, stracchino, crescenza, taleggio, spreadable) or omit it.
