The baked pasta with pumpkin and pistachios is a truly special first course. With my beloved pumpkin, I wanted to prepare a rich and tasty first course that was a hit, in addition to a simple pumpkin cream I added pistachio, gorgonzola, and bacon which created a real delight. The baked pasta with pumpkin and pistachios is creamy, stringy, and very tasty, try it, I’m sure you will like it a lot!

Ingredients
- 12.5 oz pumpkin
- 10.5 oz pasta
- 5.3 oz scamorza cheese
- 5.3 oz gorgonzola cheese
- 3.5 oz bacon
- 1.8 oz parmesan cheese
- 1 glass water
- to taste salt
- to taste black pepper
- 1.8 oz unsalted pistachios
Steps
● The baked pasta with pumpkin and pistachios is very simple and quick to prepare, first put the bacon (sweet or smoked, I used the latter) in a pan, toast it and set it aside. Clean the pumpkin, peel it and cut it into pieces, put it in the pan (you can use the same one as the bacon) with a glass of water, add salt and cook, covered, for 10-15 minutes.
● Cook the pasta in salted boiling water and drain it al dente. As soon as the pumpkin is cooked, put it in a food processor and blend it with the grated parmesan, if necessary, add a little pasta cooking water to obtain a nice homogeneous cream.
● In a bowl, put the pasta, the pumpkin cream, the previously roasted bacon, the scamorza in pieces, the pistachios roughly chopped, the gorgonzola, and mix all the ingredients well, add a little black pepper and pasta cooking water.
● Transfer the baked pasta with pumpkin and pistachios into a baking dish, sprinkle some grated parmesan on top, and bake it in a preheated oven at 392°F for 20 minutes.
Notes:
The baked pasta with pumpkin and pistachios can be stored at room temperature for a few hours or in the fridge for a couple of days. Instead of bacon, you can also add speck, there is no need to roast it, just add it directly to the other ingredients when seasoning the pasta.
