Banana Balls

Banana balls are soft, delicious, fragrant, clever, and super quick to prepare. I had several bananas to use up, so I decided to make sweets with only 3 main ingredients, bananas and flour. Soft and delicious, these banana balls are truly exquisite; they look like fritters but are baked in the oven. The batter is prepared with a simple fork, and they are perfect for breakfast, a snack, or after a meal. They look like sugary donuts but are obviously without leavening. You make them and bake them immediately (even in an air fryer), one leads to another!

Ingredients

  • 2 cups all-purpose flour
  • 3.5 tbsps butter
  • 2 bananas
  • 2 teaspoons baking powder
  • 1 lemon zest
  • to taste sugar and cinnamon (for coating)

Steps

  • Banana balls are super easy and quick to prepare. First, peel the bananas and mash them with a fork until they become a puree.

  • Add the flour, baking powder, grated lemon zest, and form a homogeneous dough, mixing with a fork.

  • Take a small amount of dough with a teaspoon and, with oiled hands, form balls. Place the banana balls on a non-stick tray or lined with parchment paper and bake them in a preheated oven at 356 degrees Fahrenheit for 20 minutes. Do not prolong the cooking time, or they will dry out. They will remain light in color, but this is normal.

  • Melt the butter in the microwave or a double boiler. Remove the banana balls from the oven, brush them with melted butter, and immediately coat them in sugar and cinnamon.

  • Let the banana balls rest for a few minutes before serving, so they become even softer, and the coating stays more compact.

Tips:

Banana balls can be stored at room temperature for 3/4 days. For a vegan version, you can use coconut oil instead of butter. I do not recommend classic oil or seed oil. You can also cook them in an air fryer, still at 356 degrees Fahrenheit for 15 minutes.
