Bread Focaccia

Bread focaccia is a delicious anti-waste quick and tasty recipe. I had some stale bread to use and I decided to prepare this delicious savory slab, to which I added tomatoes and olives. The bread focaccia is soft and tasty, perfect for using leftover bread, even from the day before, you can customize it with your favorite ingredients and it is excellent as an appetizer or main course, also ideal for an aperitif!

Ingredients

  • 12 oz stale bread
  • 2/3 cup water
  • 1 cup cherry tomatoes
  • 1 cup grated Parmesan cheese
  • 10 green olives
  • to taste salt
  • to taste black pepper
  • to taste oregano
  • to taste extra virgin olive oil

Steps

  • ● The bread focaccia is very simple and quick to prepare, first place the slices of bread in a bowl, pour the water and wait a few minutes, then break it into pieces with your hands and crumble it into a sort of crumb.

  • ● Add the cherry tomatoes cut into 4 parts and salted, the olives cut into small pieces, the grated Parmesan cheese, salt, black pepper, oregano and mix everything well.

  • ● Pour a drizzle of oil on the base of a non-stick pan and place the mixture, leveling it well and compacting it with your hands.

  • ● Put another drizzle of oil on top and brush it over the entire surface, then bake the bread focaccia in a preheated oven at 392°F for about 25 minutes, it should turn golden.

Notes:

The bread focaccia can be kept at room temperature for a few hours or in the fridge for a couple of days. You can customize it by adding your preferred ingredients such as cold cuts, cheese, and/or vegetables. The amount of water may vary depending on the type/hardness of the bread you use.
