Broccoli Croquettes

Broccoli croquettes are an easy, quick, and very tasty recipe. I love broccoli, and this is definitely one of my favorite recipes to cook them. Every time I make them, they disappear in a flash, we practically devour half of them before bringing them to the table! Soft inside, crispy outside and super flavorful, broccoli croquettes are extremely delicious, perfect as a second course or as an appetizer. I always make them during Christmas and New Year’s Eve. You can also prepare the mixture in advance and keep it in the fridge, or make the croquettes and then heat them just before serving!

Ingredients

  • 26 oz broccoli
  • 3.5 oz parmesan cheese
  • 0.6 cups all-purpose flour
  • 2 eggs
  • 1 clove garlic
  • to taste salt
  • to taste black pepper
  • to taste extra virgin olive oil (or vegetable oil, for frying)

Steps

  • Broccoli croquettes are very simple and quick to prepare. First, clean the broccoli, separate the florets, and cook them in salted boiling water for about ten minutes. Test doneness by piercing them with a fork.

  • Drain the broccoli well and mash them with a fork. Add salt, black pepper, minced garlic, eggs, grated parmesan cheese, flour, and mix all the ingredients well.

  • Pour the oil into a pan and heat it. Take a tablespoon of the mixture, place it in the pan, and flatten it slightly. Cook the broccoli croquettes over medium heat on both sides until golden brown (7-8 minutes in total).

  • Once cooked, drain the broccoli fritters on absorbent paper and serve them. They are excellent both hot and cold.

Advice:

Broccoli croquettes can be stored at room temperature for a few hours or in the fridge for a couple of days. For frying, you can use either vegetable oil or olive oil like I did. You can also cook the broccoli croquettes in an air fryer or in a preheated oven at 392°F (200°C) for 20/25 minutes, brushing them first with a little oil.
