The broccoli meatloaf is a delicious vegetable-based main dish. It’s not the usual minced meatloaf; I decided to use broccoli to make a tasty roll filled with ham and cheese that was literally snapped up! The broccoli meatloaf is soft, flavorful, and has a melting filling, baked in the oven, made this way it will even be loved by those who are not particularly fond of broccoli, and it’s a great way to get children to eat it. It’s perfect for Christmas parties, as an appetizer, or as an alternative main dish to the roast!

Ingredients
- 26.5 oz broccoli (already cleaned)
- 5.3 oz scamorza
- 3.5 oz grated Parmesan
- 3.5 oz cooked ham
- 1.75 oz bread crumb
- 1.75 oz breadcrumbs
- 2 eggs
- 1 clove garlic
- to taste salt
- to taste black pepper
- to taste breadcrumbs (for coating)
- to taste extra virgin olive oil
Steps
The broccoli meatloaf is very simple and quick to prepare. First, clean the broccoli, detach the various florets, and cook them in salted boiling water for 10-15 minutes.
Drain the broccoli well and mash them with a fork, add the eggs, breadcrumbs, finely chopped bread crumbs, grated Parmesan, salt, black pepper, minced garlic clove, and mix everything.
Place some breadcrumbs on a sheet of parchment paper and spread the meatloaf mixture on top, forming a rectangle about half an inch thick.
Fill the base with slices of cooked ham and pieces of scamorza and, using the underlying parchment paper, form a roll, seal the ends well, and coat the broccoli with a little more breadcrumbs.
Place the broccoli meatloaf in a baking tray, keeping the parchment paper underneath, pour a drizzle of extra virgin olive oil over it, and bake it in a preheated oven at 392°F for about 30 minutes until it’s nicely golden.
Notes:
The broccoli meatloaf keeps well at room temperature for a few hours or in the fridge for a couple of days. You can customize the filling with the ingredients you prefer, only cheese for a vegetarian version, or speck or sautéed sausage.
