The carrot cutlets are a quick, healthy, tasty, and delicious recipe, a vegetarian alternative to traditional meat cutlets. My daughter Matilde loves carrots, so I made them like this, as cutlets, and baked them. They were a real treat! Carrot cutlets are soft inside with a golden and crispy crust, I’m sure your kids will love them, not just them!

Ingredients
- 1.1 lbs carrots
- 1.76 oz grated parmesan cheese
- 1.76 oz semolina flour
- 1 egg
- to taste salt
- to taste black pepper
- 2 eggs
- to taste salt
- to taste all-purpose flour
- to taste breadcrumbs
Steps
Carrot cutlets are very simple and quick to prepare. First, peel the carrots, cut them into small pieces, place them in a microwave-safe container, add a bit of water, and cook them at the highest power (around 800W) for 5 minutes (alternatively, you can blanch them, put them in a pot with cold water, bring to a boil and continue cooking for 5 minutes).
Drain the carrots well and chop them for a few seconds with a food processor or mixer. Let the carrots cool and then add the eggs, semolina flour (or chickpea flour or all-purpose flour), grated parmesan cheese, spices to taste (I used garlic powder, thyme, and rosemary), salt, black pepper, and mix all the ingredients well.
Take a bit of the mixture with a spoon, flatten it quickly in the palm of your hand and coat the carrot cutlets first in the flour, then in beaten eggs with a pinch of salt, and finally in the breadcrumbs.
Place the carrot cutlets on a baking tray, drizzle a little extra virgin olive oil on top, and bake the carrot cutlets in a preheated oven at 392°F for about 20 minutes, until golden.
Notes:
Carrot cutlets can be stored at room temperature for a few hours or in the fridge for up to 3 days. I do not recommend chopping raw carrots; if you do not want to cook them in the microwave or do not have one, you can blanch them or, better, steam them. For a tastier version, you can also fry them (or cook them in an air fryer).
